The All-Important Falafel Salad

We have a huge penchant for Greek food, and falafel salads are far and above our favorite dish to eat. It is a healthy, filling and delicious entrée to enjoy for lunch or dinner; but  sadly we don’t get to eat it as often as we would like. Fortunately, we came across an appetizing and easy way to make our beloved dish thanks to the blog Simply.Real.Food. See the recipe in full after the jump.

Falafel Patties


-1 can garbanzo beans

-2 small zucchinis, shredded

-3 tbsp fresh parsley

-1 tbsp lemon juice

-2 tsp cumin

-2 cloves garlic

-2 teaspoons sesame seeds or tahini (optional)

-sea salt and pepper

-Optional ingredients to add include shredded carrots, onions or more spices such as garam masala, thyme or curry powder


-Preheat oven to 385. Add all ingredients to a blender or food processor with a bit of water if needed and mix together.

-Take a 1 tbsp measuring spoon and scoop the falafel batter onto a lightly oiled or sprayed baking sheet, spacing evenly.

-Bake in the oven for 15-20 min on one side, then flip and cook another 10-15 min until the patties have browned evenly. For more crispy falafels, fry the batter on the stove.

Cucumber-Dill Yogurt Dressing


-1 cup organic whole milk greek yogurt

-1 cucumber, seeds scooped out and sliced thinly

-1 tbsp dried dill

-1 tbsp chopped fresh mint

-1 tsp lemon juice

-1 clove garlic, chopped

-sea salt and pepper


-Combine all ingredients in a bowl and stir together.

-Chop romaine lettuce and add baby tomatoes or chopped bell peppers. Add the falafel patties and top with the cucumber-dill dressing.
