Memorial Day Weekend Drink: Watermelon Tequila Cocktail

Memorial Day Weekend is the unofficial start of summer, and no such weekend would be complete without a refreshing watermelon cocktail. YumSugar has a simple and tasty recipe that combines watermelon, tequila, mint, blueberries and lime juice for a flavorful and party-friendly drink. See the full recipe after the jump.

Ingredients
(makes 8 drinks)
-1/4 cup water
-1/4 cup granulated sugar
-8 cups diced seedless watermelon (1 lb)
-1/4 cup fresh lime juice
-1 3/4 cups blueberries
-3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
-1 1/4 cups silver tequila
-Ice

Directions
-Bring the water and sugar to a simmer in a small saucepan and stir over moderate heat for about 1 minute until the sugar is dissolved. Let cool.
-Puree the watermelon in a blender until smooth.
-Place a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract. Discard pulp.
-Combine the sugar syrup with lime juice, blueberries and mint leaves in a large pitcher.
-Use a wooden spoon to lightly muddle the blueberries and mint.
-Add watermelon juice and tequila in the pitcher.
-Refrigerate for 2 hours or until chilled.
-Garnish drinks with mint sprigs and serve.
